Step 1.
In an 8-inch cast-iron skillet, brown chorizo over medium, 5 to 7 minutes. In the very same frying pan, cook onion and chile pepper in veggie oil (if needed) till softened, 5 to 8 minutes. Stir in all however 2 tablespoons of the chorizo.
Step 2.
Bake up until cheese melts and bubbles, 8 to 10 minutes. Leading with reserved chorizo and preferred toppers. Scoop into warm corn or flour tortillas.
